Gray called in on the butcher to check out our most recent beast on the hook. I was concerned about fat cover due to it being so early in the season, but the butcher said it was “ideal”.

We like to keep our finger on the stats, on our Dexter beef ratios . What I am afraid of is that the bragging about heavier Dexter hook-weights on US Facebook Dexter pages by some producers sounds competitive, like a challenge, “mine is bigger than yours” kind of thing.

Intentionally or not, bragging about  hook weights sounds like it encourages the up-sizing of Dexters for back-yard beef production, rather than breeding the original smaller Dexter package to conserve the unique qualities of the breed and Dexter beef.
